Bacon & Tomato Cups

Little buttermilk biscuit cups are baked with a savory mixture inside. Submitted by Kelli.

8 slices bacon
1 tomato, seeded and chopped
1/2 onion, chopped
3 ounces shredded Swiss cheese
1/2 cup mayonnaise
1 tsp. dried basil
1 16-ounce can refrigerated buttermilk biscuit dough (regular size, not Grands)

Preheat oven to 375 degrees. Lightly grease a mini muffin pan.

In a skillet over medium heat, cook bacon until crisp. Drain on paper towels. Crumble bacon into a medium bowl, and mix with tomato, onion, cheese, mayonnaise and basil.

Separate biscuits into halves horizontally. Press each half into prepared muffin tin. Fill with the bacon mixture. Bake for 10 to 12 minutes in the preheated oven or until golden. Repeat with remaining biscuits and filling. Can be baked and rewarmed.

Prep Time: 10 minutes
Cook Time: 12 minutes
Ready in: 30 minutes

Candy-Coated Pecans

These spiced nuts have become favorites of almost everyone who has tried them. Submitted by Jan.

1 egg white
1/2 cup brown sugar, firmly packed
1 dash vanilla extract
4 cups whole pecans

Preheat oven to 275 degrees.

Line a cookie sheet with wax paper, then spray with cooking spray. Beat egg white until stiff. Stir in brown sugar and vanilla until smooth. Mix in pecans and stir until coated. Pour nuts onto the prepared cookie sheet. Bake until browned, about 10 to 15 minutes. Cool and store in a tin.
Prep Time: 10 minutes

Cook Time: 15 minutes
Ready in: 25 minutes
Makes: 10 to 12 servings

Dill, Feta & Garlic Cream Cheese Spread

A favorite at every gathering, this dip's wonderful flavors become more intense with time. Submitted by Bronte Getter.

2 8-ounce packages cream cheese, softened or at room temperature
1 8-ounce package feta cheese, crumbled
3 cloves garlic, peeled and minced
2 Tbs. chopped fresh dill

In a medium bowl, thoroughly blend cream cheese, feta cheese, garlic and dill with an electric mixer. Cover and refrigerate for at least 4 hours. Serve with firm, raw veggies (like carrots) or with crackers.

Prep Time: 15 minutes
Ready in: 4 hours, 15 minutes
Makes: 3 cups, serving 24

Artichoke Bruschetta

This is a great bruschetta recipe based on an artichoke dip. It's always a huge hit. Try adding spinach or tomatoes. Submitted by Roxanne.

1 6.5-ounce jar marinated artichoke hearts, drained and chopped
1/2 cup grated Romano cheese
1/3 cup finely chopped red onion
5 Tbs. mayonnaise
1 French baguette, cut into 1/3-inch-thick slices

Preheat the broiler.

In a medium bowl, mix marinated artichoke hearts, cheese, red onion and mayonnaise. Top French baguette slices with equal amounts of the artichoke mixture. Arrange slices in a single layer on a large baking sheet.

Broil in the preheated oven 2 minutes or until toppings are bubbly and lightly browned.

Prep Time: 18 minutes Cook Time: 2 minutes
Ready in: 20 minutes
Serves: 8
