Luscious 1-pot chicken

This high-protein, easy-to-make stew bursts with flavor and antioxidants. Add a green salad for an ideal meal.

Spicy Moroccan Chicken

2 tsps. each cinnamon, cumin, coriander
1/2 tsp. cayenne pepper, or to taste
Salt, to taste
1 1/3 lbs. boneless, skinless chicken breasts, cut into bite-sized pieces
2 Tbs. olive oil
1 medium yellow onion, chopped
1 tsp. grated ginger root
3 garlic cloves, crushed
1 cup fat-free, low-sodium chicken broth
2 cups canned, chopped, no-salt-added tomatoes
2 cups canned chick peas, rinsed
3/4 cup kalamata pitted olives, halved
1/2 cup raisins
2 Tbs. honey
1 bay leaf
1 Tb. cinnamon
1/2 lemon, seeded, cut into 4 wedges

In a shallow bowl, combine 2 tsps. cinnamon, cumin and coriander, plus cayenne pepper and salt. Dredge chicken in spices.

In a large skillet, heat oil over medium heat. Add chicken; sauté until browned, turning once. Remove chicken.

Add onion to skillet; sauté 3 minutes. Add garlic, ginger and broth; sauté 5 minutes.

Add all remaining ingredients and the chicken. Cover and simmer 30 minutes.

Serve in bowls, with whole-wheat pitas.

Serves 6 Per serving: 431 calories, 31g protein, 45g carbohydrates, 15g fat (2g saturated), 59mg cholesterol, 7g fiber, 879mg sodium

Mix up your routine: Try a triathlon


A triathlon is a great way to get in shape without burning out on one sport.

Triathlon season is getting underway. The USA Triathlon organization estimates that 150,000 to 250,000 people try a multi-sport event in the United States each year. And the number of triathlon participants is growing quickly as people recognize that training for the events (running, cycling, swimming) is a great way to vary your workout, avoid or overcome injury, meet people and get in shape without burning out on one sport.

With training, almost anyone can do it. "An unfit beginner could complete a sprint distance triathlon with 12 weeks of training, no more than four hours a week," says Gale Bernhardt, the author of Triathlon Training Basics and 2004 U.S. triathlon Olympic coach. "You can walk and still enjoy a triathlon," she says.

Top tips to start, from Bernhardt:

Team up. Enlist two friends and each train for a leg of the race. It's not as daunting, and you'll have a support network. Once you experience the energy on race day, you'll be hooked and ready to train for all three sports.

Get structure. A training plan or coach will help. With a roadmap to how you'll complete your training, the task will seem much easier. Find a certified coach at usatriathlon.org.

Start short. Complete a sprint distance triathlon (1/2-mile swim, 12- to 15-mile bike ride and 3.1-mile run) before tackling Ironman training (2.4-mile swim, 112-mile bike ride and 26.2-mile run). Ease into the sport.
