Rachael Rays advice to get in shape -- in the kitchen

"Working five jobs," replies Rachael Ray, the busy author and TV host, when asked how she stays fit. "Well, that and doing sit-ups and push-ups and those great Jane Fonda butt lifts."
Although Ray, whose "Big Orange Book" came out in November, may not have time for long hours at the gym, she does have time to make quick, easy meal plans accessible to everyone. "All my books are about keeping it simple," she says. "Ninety percent of what you eat in restaurants you can make at home. Close your eyes, and if you can visualize yourself making it, you can."
Ray shares some of her top suggestions for healthier cooking with us:
Make the switch. "Replace white flour products with wheat and whole grains. Make sandwiches on wheat bread, and buy whole-grain chips, waffles and pasta. You'll hardly notice a difference in taste."
Go extra virgin. "Use EVOO [extra-virgin olive oil] instead of butter. There isn't anything you can cook in butter that can't be cooked in olive oil."
Less is more. "Use full-flavored foods instead of no-fat foods -- just a little less of them. For example, use less of a full-flavored cheddar rather
than more of a no-fat cheddar."
Look before you eat. "Look at labels. ... If you can't read an ingredient, chances are you should not be putting it in your body."
