Eating alone is no excuse for skipping vegetables.

Don't settle for cardboard food in cardboard boxes because you dine alone. A few smart, easy options:

Freeze individual meat and poultry servings. You'll control portions and limit leftovers.

Use one ready-made food. Then put your effort into making the rest of your meal well-rounded.

Try gourmet-style entrees. Stuffed chicken breasts with spinach, cheese and artichokes bake in your toaster oven in 20 minutes, giving you time to throw together a salad or microwave a vegetable.

Stock up on steam-in-bag vegetables in sizes for one. They leave you no excuse to neglect the part of the meal your mother always told you was the most important.
