Enjoy a green picnic


Tabbouleh salad stays fresh in warm temperatures.

Summer's sunshine and fresh green grass practically beg for the opportunity to pack up that picnic basket and enjoy a meal outdoors. Individually packaged chips and cookies might be convenient, but they're not always good for your diet -- or the environment, says Sophie Uliano, author of The Gorgeously Green Diet: How to Live Lean and Green. She recommends aiming for a "no-waste picnic."

Here are Uliano's tips for a tasty and "green" picnic:

Try non-leafy salads. Packing a tabbouleh salad made from couscous or bulgur wheat -- dressing optional -- makes for a fresher side dish.

Buy organic when possible. That way, you can avoid harsh pesticides that often are found in picnic favorites such as berries.

Use leftovers. Raid your fridge for vegetables, grab some protein-rich eggs and make a frittata.
