Recipe: Lima Bean Waldorf Salad

This crunchy salad is full of antioxidants from apples, walnuts and olive oil
and folic acid from beans -- all good for the arteries.
LIMA BEAN WALDORF SALAD

10 ounces frozen baby lima beans, cooked 1 apple, such as gala, diced
1/4 cup walnut pieces
1/4 cup crumbled feta cheese Dressing: 3 Tbs. apple juice 2 Tbs. extra-virgin olive oil 1 Tb. balsamic vinegar Salt and pepper to taste Combine salad ingredients. Whisk together dressing. Toss all.
Serves 4.
Per serving: 250 calories, 7.7g protein, 14g fat (2.7g
saturated), 26g carbohydrates, 5.4g fiber, 132mg sodium.
Antioxident power of curry
Turmeric, a spice used in curries, may help fight clogged arteries, Spanish researchers
have found. Turmeric contains curcumin, a powerful antioxidant. In a recent test, 30
volunteers over age 40 took turmeric tablets containing 20 milligrams of curcumin
daily for two months.
