Recipes that call for cooked spinach almost always ask you to squeeze out any excess water. Use your hands or a clean kitchen towel to firmly compress the spinach, almost as you would a sponge. “Due to its very high water content, unsqueezed spinach adds green water to whatever you're making,” says Allie Lewis Clapp, food director of Real Simple magazine. “And that's not very helpful or appealing.”
