Chicken Lettuce Cups

The perfect snack while watching the Super Bowl: Here's TV super-chef Guy Fiori's recipe for Chicken Lettuce Cups

Ingredients:

  • 2 Tbs. canola oil

  • 1 pound boneless, skinless chicken thighs, diced

  • 1/3 cup diced carrots

  • 1/3 cup diced celery

  • 1/3 cup diced red bell pepper
  • 1/3 cup diced red onion
  • 1/3 cup diced snap peas
  • 1 tsp. minced ginger
  • 1 tsp. minced garlic
  • ½ cup shiitake mushrooms, sliced
  • 1/3 cup mung bean sprouts, cut in half
  • ¼ cup Plum Sesame Sambal Sauce (recipe follows)
  • 2 Tbs. diced green onions
  • 5 wonton skins, fried and crushed
  • 1 Tbs. unsalted peanuts, crushed
  • 1 head iceberg lettuce
  • ½ tsp. black sesame seeds

    Put a medium wok over high heat; add oil. Add chicken, and sauté 3 minutes, or until opaque. Add carrots, celery, red bell peppers, red onions and snap peas, and sauté until tender yet crisp. Add in the ginger, garlic, shiitakes and bean sprouts. Immediately deglaze with prepared Plum Sesame Sambal Sauce for 30 seconds, or until sauce thickens.

    Pour chicken and vegetable mix into serving bowl. Top with green onions, crushed wontons and peanuts. Cut iceberg lettuce in half, from top to bottom, remove the core and carefully remove outer layers of lettuce. Wash lettuce in cold water, and pat dry with paper towels. Stack lettuce cups on platter.

    For assembly, fill each cup with about 1/3 cup chicken mixture; drizzle with sauce, garnish with black sesame seeds and serve.

    Plum Sesame Sambal Sauce

  • ½ cup soy sauce
  • 1 Tbs. garlic, minced
  • 1 Tbs. ginger, minced
  • 1 Tbs. sambal hot sauce
  • 1 Tbs. plum sauce
  • 2 Tbs. rice wine vinegar
  • 1 Tbs. hoisin sauce
  • 1 tsp. minced cilantro
  • 1 tsp. sesame seeds, toasted
  • ¼ tsp. sesame oil
  • 1 Tbs. mirin

    Mix all ingredients thoroughly. Shake before serving.

    Yield: 6 appetizer portions

    Per serving: 209 calories, 11 g carbohydrates, 18 g protein 23, 10 g fat (1 g saturated fat), 63 mg cholesterol, 2 g dietary fiber, 415 sodium
