Louisiana BBQ Shrimp

The perfect snack while watching the Super Bowl: Here's TV super-chef Guy Fiori's recipe for Louisiana BBQ Shrimp.

Ingredients:

  • 1 stick, plus 3 Tbs. unsalted butter

  • 1/4 cup minced onion

  • 1/4 cup sliced green onion

  • 1 Tbs. chopped garlic

  • 1/2 tsp. cumin
  • 1 tsp. dried thyme
  • 1 tsp. dried basil
  • 1/2 tsp. ground red pepper
  • 1 tsp. paprika
  • 24 shrimp (21–25 count), peeled and deveined
  • 1 bottle beer (Abita, a Louisiana-based brand, preferred)
  • 1 cup shrimp stock (or substitute seafood stock)
  • Sea salt and freshly cracked pepper, to taste
  • Louisiana-style hot sauce
  • Juice of 1/4 lemon

    Preheat oven to 350 degrees F.

    In a sauté pan over medium-high heat, melt the stick of butter. When butter foams, add onions and sauté for 3 minutes, until translucent. Add garlic and all other seasonings, and cook for 2 minutes, stirring to combine flavors.

    Carefully arrange shrimp in an oven-safe pan. Pour seasoned butter over shrimp. Place in oven just until shrimp are done (do not overcook, or you will have rubbery shrimp), approximately 6 minutes.

    Carefully remove shrimp to hot plate and hold warm. Add beer and shrimp stock to the seasoned butter and cook over medium-high heat on stovetop until reduced by 1/3 in volume. Whisk in cold butter, 2 or 3 pats at a time, until you achieve a buerre blanc sauce. Sauce will thicken enough that when you run your finger down the back of the spoon, you will see a clear line.

    Remove sauce from heat and adjust seasoning with salt, pepper and hot sauce to taste. Arrange shrimp carefully on service plate and drizzle with sauce and lemon juice. Serve with warm crusty bread.

    Yield: 6 servings
