From Bill Bailey, owner of Copper River Seafoods in Alaska
• ľ tube of Ritz crackers, rolled into fine crumbs
• 3 ˝ pound cans of plain, wild sockeye salmon
• 3 eggs
• ˝ cup chopped onions
• ˝ cup chopped celery
• Johnny’s Seasoning (or your seasoning salt of choice), to taste
In a large bowl, mix all ingredients together, and add Johnny’s Seasoning to taste.
Form into patties. Cover bottom of frying pan with oil and fry at medium-high, flipping halfway between. Serve.
Yield: 15 patties
