From Bill Bailey, owner of Copper River Seafoods in Alaska
1 cup tomatoes, diced
1 cup onions, diced
2 cups wild King or Sockeye salmon, cut into bite-size pieces (best to use frozen salmon that's been thawed)
Mix all ingredients together, and salt to taste.
Serve immediately. Note: The acids from the onions and tomatoes will cook the fish the longer it stays out.
