Grilled cheese doesn’t have to create a wave of guilt. A new book, Recipe Rehab, inspired by the ABC TV series of the same name, offers some healthful updates to the classic favorite:
Switch to whole-grain bread. With all that melty cheese, you won’t notice a difference.
Choose a new cheese. With one that is sharper and more flavorful, the less you’ll need.
If you think less cheese will leave you feeling deprived, add healthy classics to the mix. Try some onion and peppers, or the classic tomato.
Create crispy bread without all of the butter. Try a Panini press, or grease the pan with olive oil.
