It's easy to read, and very common sense. It follows a low-fat, higher carbohydrate approach, emphasizing fruits, vegetables, and complex carbs.

The Aerobics Program for Total Well-Being: Exercise, Diet by Kenneth Cooper, M.D., M.P.H.
This is THE classic treatise on the importance of exercise in one's daily routine. Although the information has been updated numerous times, in 1968 this is the book that got the whole aerobics movement started. It's a must for anyone interested in beginning a program.

Advanced Nutritional Therapies by Kenneth Cooper, M.D., M.P.H.
This book, which I helped Dr. Cooper edit, explaining in layman's terms the dos and don'ts of nutritional supplements.

Tyler's Herbs of Choice: The Therapeutic Use of Phytomedicinals by Varro Tyler, Ph.D.
Although this is not a "diet book," this is one of the most balanced books available on herbal supplements that people use regularly.
